Here are 8 tips from the National Cancer Institute to keep in mind when preparing food. 1. Wash your hands, knives, and countertops before and after preparing food. 2. Use separate cutting boards and knives for meats and produce. 3. Wash all raw fruits and vegetables before eating them. 4. Thaw meats and fish in the refrigerator or microwave. Do not thaw at room temperature. 5. Don’t consume raw fish or meat or unroasted nuts. 6. Don’t consume unpasteurized juices, eggs, or dairy products. 7. Use a thermometer to cook meat and eggs to safe temperatures. 8. Don’t eat foods sitting out for more than 2 hours. Put leftovers in the fridge right away and eat them within 3 days.
